The Valrhona Pâtisserie Championship 2019






VALRHONA AND ODAIOS FOODS ARE DELIGHTED TO ANNOUNCE THE LAUNCH OF THE SIXTH VALRHONA PÂTISSERIE CHAMPIONSHIP - #VALRHONACHAMP2019. THE OBJECTIVE OF THIS COMPETITION IS TO PROMOTE AND ADVANCE THE STANDARDS’ OF PASTRY CHEFS ACROSS THE ISLAND OF IRELAND.

 
'AN IRISH SUMMER'
This year we want you to create a plated restaurant dessert using ‘An Irish Summer’ as your theme. You must use at least one couverture from Valrhona’s Grand Cru de Terroir range. You can use additional Valrhona products if desired.

A pre-dessert is also required. Your pre-dessert must be vegan and made without use of a mould.

THE WINNER WILL RECEIVE
- a 3 day training course (stage) in l’École Valrhona, Tain L'Hermitage, France, see video below
- dinner in a Michelin Star Restaurant
- access to the UK & Ireland selection of Valrhona’s Chocolate Chef Competition (aka C³).

Entrants must put forward an original recipe under the theme ‘an Irish Summer’. The competition is open to all pastry professionals and catering students across the island of Ireland. Previous winners and individuals currently working for the organising companies may not enter. Island of Ireland only.

Paula Stakelum, Executive Head Pastry Chef at Ashford Castle, wins the Valrhona Pâtisserie Championship 2017

Paula Stakelum, executive head pastry chef of Ashford Castle, has won the fifth Valrhona Pâtisserie Championship 2017, held Tuesday 30th May in DIT Cathal Brugha Street. Paula faced off stiff competition from top pastry chefs from across Ireland to claim the prestigious title. The five other finalists competing on the day included Aideen Burke (Portmarnock Hotel), Alane Lima Santos (L'Art Du Chocolat), Andrius Zubernis (The Brewer's House), Karen Smith? (China Sichuan) and María Mariano Garcia (Dromoland Castle).

Aoife Noonan, pastry chef from Restaurant Patrick Guilbaud, has won The Valrhona Pâtisserie Championship 2014, held Tuesday 10th June in DIT Cathal Brugha Street. Aoife faced off stiff competition from The Lady Helen Restaurant in Mount Juliet, L’Atitude 51 in Cork, Galway-Mayo
Institute of Technology and DIT Cathal Brugha Street, to win the fourth edition of this award.

Marion Dony, Pastry Chef at Restaurant Patrick Guilbaud is the winner of the third Valrhona Pâtisserie Championship organised by Valrhona and Odaios Foods. Marion’s recipe The Sunbeam was chosen out of the six finalists who competed in D.I.T. Cathal Brugha Street on Wednesday, 6th of June.

Ludovic Lantier, pastry sous chef at The Ritz Carlton, Powerscourt, is the winner of the first Valrhona Pâtisserie Championship 2009, organised by Valrhona Chocolate and Odaios Foods. Ludovic's recipe Degustation of Alpaco & Taïnori with Redcurrant was chosen out of the six finalists who competed in D.I.T. Cathal Brugha Street Tuesday, 23rd of June.
