The Valrhona Pâtisserie Championship 2017





VALRHONA AND ODAIOS FOODS ARE DELIGHTED TO ANNOUNCE THE LAUNCH OF THE FIFTH VALRHONA PÂTISSERIE CHAMPIONSHIP. THE OBJECTIVE OF THIS COMPETITION IS TO PROMOTE AND ADVANCE THE STANDARDS’ OF PASTRY CHEFS ACROSS THE ISLAND OF IRELAND.


'CLASSICS REVISITED'
This year we want you to choose any Classic Dessert and reinvent the recipe avant-garde style, using a contemporary approach. You must create a plated restaurant dessert choosing at least one chocolate from the Valrhona Guanaja range - Guanaja P125, Guanaja 70% and/or Guanaja Lactée 41%. You can use any additional Valrhona products if desired. A minimum of 2 Valrhona chocolates must be used. A chocolate decoration must also be made for the dessert.

THE WINNER WILL RECEIVE
- a 3 day training course (stage) in l’École Valrhona, Tain L'Hermitage, France, see video below
- dinner in a Michelin Star Restaurant
- access to the UK & Ireland selection of Valrhona’s Chocolate Chef Competition (aka C³).

Entrants must put forward an original recipe under the theme of ‘classics revisited’. The competition is open to all pastry professionals and catering students across the island of Ireland. Previous winners and individuals currently working for the organising companies may not enter.

Aoife Noonan, pastry chef from Restaurant Patrick Guilbaud, has won The Valrhona Pâtisserie Championship 2014, held Tuesday 10th June in DIT Cathal Brugha Street. Aoife faced off stiff competition from The Lady Helen Restaurant in Mount Juliet, L’Atitude 51 in Cork, Galway-Mayo
Institute of Technology and DIT Cathal Brugha Street, to win the fourth edition of this award.

Marion Dony, Pastry Chef at Restaurant Patrick Guilbaud wins the 2012 Valrhona Pâtisserie Championship. 
Marion Dony, Pastry Chef at Restaurant Patrick Guilbaud is the winner of the third Valrhona Pâtisserie Championship organised by Valrhona and Odaios Foods. Marion’s recipe The Sunbeam was chosen out of the six finalists who competed in D.I.T. Cathal Brugha Street on Wednesday, 6th of June.

Darren Hogarty, pastry chef at Chapter One Restaurant, is the winner of the second Valrhona Pâtisserie Championship, organised by Valrhona and Odaios Foods. Darren’s recipe Textures of Valrhona & Mint from Pre-Dessert to Petit Fours was chosen out of the six finalists who competed in D.I.T. Cathal Brugha Street on Wednesday, 2nd of June.

Ludovic Lantier, Pastry Chef at The Ritz Carlton, wins the first ever Valrhona Pâtisserie Championship.
Ludovic Lantier, pastry sous chef at The Ritz Carlton, Powerscourt, is the winner of the first Valrhona Pâtisserie Championship 2009, organised by Valrhona Chocolate and Odaios Foods. Ludovic's recipe Degustation of Alpaco & Taïnori with Redcurrant was chosen out of the six finalists who competed in D.I.T. Cathal Brugha Street Tuesday, 23rd of June.
